Fall is the perfect time to take advantage of the rich colors of the season, so load up on beautiful, sweet potatoes, and winter squash. Try acorn, butternut, hubbard, buttercup, turban, French, and Cheesesquash, Calabaza, delicata, kabocha, and any other delicious and healthy members of the edible gourd family. They are a rich source of iron, vitamins A and C. Add them to soups, and sauces, salsas, and roasted vegetable dishes. Look for firm, unblemished squash. They don't need refrigeration, but do store them in a cool place - I like to keep mine displayed on a large platter as a centerpiece on my kitchen table.
