Soy Bacon and Pepper Burgers
This recipe is vegetarian but by simply substituting the Ener-g for
the dairy egg, you can have a delicious vegan option.
Serves 4
3 Slices whole wheat sliced bread 1 14-ounce package meatless ground soy "beef", Gimme Lean, by Lightlife foods is found in the refrigerated section of the produce section at the supermarket 1/4 Cup chopped organic Italian flat leaf parsley 1/4 Small organic onion, finely chopped 2 Cloves organic garlic, finely chopped 1 Small organic red bell pepper, finely chopped 2 Strips meatless bacon, finely chopped 2 Tablespoons extra virgin live oil, divided salt and pepper to taste 1 Organic egg, or 1 tablespoon Ener-g, and 2 tablespoons tap water
Tear the bread into small pieces and place into a mixing bowl. Add
the ground soy "beef" and the parsley, onion, garlic, bell pepper, soy
bacon, one tablespoon of the olive oil, a little salt and pepper. Using
your hands, mix the ingredients until well combined. Taste for
seasoning. Add the egg or the Ener-g and tap water (egg or Ener-g helps
to "bind" the ingredients) and mix well to combine. Form into 4 burgers.
Heat a large skillet over medium-low heat. Add the remaining
tablespoon of olive oil and swirl it around the skillet to cover the
bottom. Arrange the burgers in a single layer in the heated oil. Cover
and cook for about 8 minutes, or until the undersides are well browned
but not burned. Turn the burgers, cover and cook the other sides for
about 5 minutes, or until the burgers are well browned but not burned.
