Rich and Fluffy Chocolate Caramel
Frosting
Makes about 2 cups
½ Cup trans fat free shortening, Spectrum Organic makes a
fine one
3 Tablespoons trans fat free margarine, EarthBalance makes an organic buttery spread 2 Cups confectioners' sugar, sifted after you measure it 1 Cup cocoa powder, sifted after you measure it 1 Teaspoon chocolate extract 2 Tablespoons caramel flavor shot 1/3 Cup organic dairy milk or organic plain soymilk
Measure the shortening and the margarine into a mixing bowl. Using a
hand mixer set on medium speed, cream this mixture for about 30 seconds,
stopping once or twice to scrape the bowl. Add the remaining
ingredients. Using a hand mixer set on low speed, beat this for about a
minute, stopping once or twice to scrape the bowl, then raise the speed
to medium-high speed, for an additional 2-3 minutes, until light and
fluffy, stopping a few times to scrape the bowl.
