Maple Mashed Sweet Potatoes This recipe combines my love for both pure maple syrup and beta-carotene rich sweet potatoes. Serves 4 3 Large sweet potatoes, peeled and quartered 2 Tablespoons trans-fat free margarine or canola oil 3 Tablespoons pure maple syrup salt and pepper to taste Cook the potatoes in lightly salted boiling water for about 15 minutes, until tender-sort. Drain. Return the potatoes to the pot. Mash with a potato masher. Add the margarine, maple syrup, salt and pepper. Continue mashing until the potatoes are as smooth as you like. Taste for seasonings. |
