Fluffy Pumpkin Spice Frosting
Makes 2 cups
½ Cup trans fat free shortening
3 Tablespoons trans fat free margarine or spread 2 Cups confectioners' sugar, measured then sifted 1 Teaspoon pumpkin pie spice 2 Tablespoons local apple cider 1/4 Cup organic dairy milk or organic plain soymilk Measure the shortening and the margarine into a mixing bowl. Using a hand mixer set on medium speed, cream this mixture for about 30 seconds, stopping once or twice to scrape the bowl. Add the remaining ingredients. Using a hand mixer set on low speed, beat this for about a minute, stopping once or twice to scrape the bowl, then raise the speed to medium-high speed, for an additional 2-3 minutes, until light and fluffy, stopping a few times to scrape the bowl. |
