Happy Spring!

Happy Spring! 

We are so happy to see the first daffodils and pretty pansies, and to get our first deliveries of spring onions. It's been a long winter here in New Haven Connecticut, so we are especially grateful to welcome spring. 

During the winter months we took on some fun projects. We remodeled our bathrooms and they are really lovely. One customer even commented that "The bathroom is nicer than my dining room." Very sweet, but I hope he didn't mention that to his wife who was waiting for him at their table:-) As a tribute to our beloved organic farmers we commissioned an artist, Holly to paint farm scenes on the soffet that borders our ceilings, and soon, we will add two tables from City Bench, the fine and extraordinarily talented brothers who designed and built our stand up bars. These new tables will also be made of reclaimed wood from New Haven. More details to follow. 

Final proofreading has been completed for our new menus and Erin should have them installed within a couple of weeks. We hope you like our additions. Please come taste.

Also, we have read many times about the amount of water it takes to grow just one almond - 1-1 1/2 gallons - Eeeks!  And, given that most of our almonds here are grown in draught prone California, we've decided to switch from Almond milk to Oat milk for our smoothies, baking, etc. 

We will continue to seek out ways to be kind to our one and only Mother Earth, and as we find ways, you can be sure we will respond. We are after all, in this together! And, we like it that way.

Happy New Year dear Community! 

Although we are always happy to see a new year with new possibilities, 2016 was a pretty good year for us, too. Thanks to our beloved staff, community, and partners we enjoyed access to great ingredients which we believe is the foundation of real food. And, that’s why we’re here. 

For us, this means buying as many organic ingredients as we can. You, my friends, our children, and this world of ours deserve to have clean food, free of herbicides and fungicides. And, studies consistently prove that this is best for us and for our environment. 

 

We learned that hibiscus and turmeric have such powerful antioxidants so we found lots of delicious ways to add them to your food and drinks here at Claire’s Corner Copia. They are often found in our smoothies, our Sick Girls Tea,  and savory dishes. And, Hibiscus Lemonade is a big hit, too! 

And, fresh turmeric is often combined with fresh ginger, another wonderful antioxidant in our drinks and curries. We even use them to color our frostings for cupcakes!

We’ll be introducing a few other super healthy ingredients to your foods and drinks this year, too. As they say, Stay Tuned:-) 

Getting old, as you know, requires a bit of maintenance. We bought a new stove and ovens this year, and replaced all of our ceiling lighting with new fixtures with LED lights so it’s wonderfully bright and very energy efficient. 

We also remodeled our handicapped access bathroom and our second bathroom is getting a remodel, too. We love it and hope you do, too. 

Soon, we’ll have our new, energy efficient deli case, too. Our old one had a good run, but we are in our 42nd year after all so it was time to invest in a new model. On to the future! 

2017 will also bring some menu changes on our in house menus and our catering menus as well. We should have them finished and ready for you by the end of February. 

Our staff are the foundation of our beloved little place and I remain incredibly grateful to each of them. Thank you! 

We could not conduct business without your support. Thank you from the bottom of my heart. You, your smiles, your over the top kindness - even when we mess up, which we do, because we’re good, but we’re humans:-) make this very hard work remain joyful for us. We love that we can help you to eat and enjoy real food, in hopes that we can have a healthier world. Our partners at Yale Properties, The city of New Haven, our NH and Yale Police and Firefighters help and protect us every single day. Thank you. 

We continue to look for ways to help others who need the help. Cancer research, access to real food for those without it, and lifting children from poverty remain our focus. We won’t stop until cancer is no longer a threat to our health, and wholesome food is available to everyone in our city, and that every child in our city has the best possible chance at happiness. We’ll continue to raise and donate funds to programs that will one day make our collective dreams come true, and to share information that encourages others to make good choices when they eat.

Summer, 2016

Hello from our kitchen at Claire's Corner Copia. We hope that your summer was and continues to be filled with good health, a lot of love, and really fabulous garden fresh and organic vegetables and fruits! Summer remains our favorite time of year, mainly because we get to celebrate the season with beautiful fresh, really fresh, organic squash blossoms, squashes, corn, tomatoes, greens, herbs, and more tomatoes! Tomatoes are finding their way into most of our soups, salads, and entrees. The variety of heirlooms tomatoes are both beautiful and delicious, and like people, each one has a little different kind of goodness than the others. 

Other new and fun things we've been making for you include our organic hibiscus lemonade and Italian sodas. We infuse gorgeous, deep magenta, lightly dried (drying concentrates their wonderful floral-lemony flavors) organic hibiscus flowers to make a syrup for our lemonades, our Pellegrino and Hibiscus syrup for our Italian sodas, and for our bright pink frostings for our cupcakes. Also, we've added several new, organic green smoothies that we hope you'll try if you haven't already enjoyed them. 

Always seeking more ways to help you to eat and drink well, we hope you'll add organic fresh turmeric to your smoothies, and our Golden Latte Smoothie. Turmeric is rich in antioxidants and adds a very slight lemony-mustard punch to your drinks. 

Organic Kale and Avocados remain your faves, so we continue to add new specials to keep us both energized and eating well. 

In honor of our upcoming 41st anniversary - Really, where did the time go:-) we are paying tribute to our beloved organic farmers. Without them, and you, we couldn't do what we love to do.  Thank you from the bottom of my heart. We hired an artist to create a mural running along the soffit of our ceiling throughout the restaurant. Holly created a farm scene and it is so beautiful a reminder of where real food always begins. Please come see it.

Summer, 2015

We love summer! So much of this feeling is because we know that our good partners at Urban Oaks Organic Farm, Satur, and Hepworth Farm, will arrive with the freshest, most flavorful and healthy summer produce. Right now, we're enjoying the organic Swiss Chard,  Asian eggplants, Squash Blossoms, Kale, and Fig Leaves, Patty Pan Squash, and of course, those "we wait all year for" summer heirloom tomatoes. We respect these limited time only vegetables by preparing them in ways that allow for their real flavor to come through.  We love to combine Swiss chard with French Lentils and fresh herbs from Urban Oaks Organic Farm for a totally delicious and very healthy meal. Swiss chard and lentils are loaded with Vitamins A and C, iron, and fiber, protein, and magnesium. All good news for your heart and entire body.  You'll see the fresh squash blossoms in fritters, over a light San Marzano tomato sauce, or in our Quesadilla Especial with fresh Epazote. Epazote is an herb that tastes like a cross between thyme and oregano and is a delicious match with squash blossoms in Mexican dishes. Asian eggplants, tender and gorgeous, are  perfect in our stir-fry dishes with other summer produce, changing each day depending on what is best. Where would we be without fresh Kale from Urban Oaks Organic farm! KaleABunga, our favorite green smoothie gets it's delicious flavor and health benefits of iron, vitamins A and C, and magnesium from this lovely and fresh kale. Aromatic fig leaves will wrap a combination of fresh ricotta, and mozzarella cheeses, with a reduction of really good balsamic vinegar. Patty pan squash are tender and filled with summer flavor reserved for fresh, really fresh produce, the kind we can get only during these summer months. A light brushing of olive oil and a sprinkle of sea salt are all they need before a trip to the oven for our Roasted Vegetable Plate. Tomatoes rule! We use these summer only tomatoes in salads, Chilled Gazpacho, bruschetti, sauces, and dressings. Happy Summer! We wish you every blessing as you Savor every delicious bite. 

Starting clean for the New Year - inside and outside:-)

Switch that sweetened iced tea to an iced blueberry, black cherry, or pomegranate green tea for a natural sweetness with no sugar needed. Squeeze fresh organic lemon into a glass of water, into your iced or hot tea, and, before squeezing the lemon onto your salad, grate some of that healthy organic lemon zest onto your salad then squeeze on that healthy juice and toss the salad with extra virgin olive oil, a little sea salt and black pepper for a bright flavor and those healthy antioxidants. Peel a fresh organic orange for your smoothie for added flavor and antioxidant - better than just adding orange juice. 
 
Think about a big variety of vegetables and fruits - There is NO ONE Superfood:-) Like people, they are all a little different and each one adds a little something extra special to your life. Aim for 7-9 servings a day for optimal health. Try to add at least one serving of fruit and/or vegetable to every meal, every snack - sliced organic apple on that oatmeal or cereal, a quarter avocado spread on your whole grain toast, a banana with a tablespoon or two of real peanut butter on the side, a big salad, vegetable and bean soup, lots of vegetables with a little pasta and sauce rather than lots of pasta with a little vegetables and sauce, a vegetable or fruit smoothie for a snack, mashed bean dip with carrots/cukes for a snack, two sides of vegetables at dinner. 
 
A great nighttime snack is A bowl of warmed frozen organic strawberries - freezing them makes them sweeter, and then top the warm berries with a sprinkle of cinnamon for more flavor and antioxidants and a dollop of plain yogurt w/a drizzle of honey and flax seeds. 
 
Clean your windows and your house with all natural cleaners , wash your clothes with all natural cleaners, skip as much dry cleaning and chemicals as you can, buy all natural creams, shampoos, etc, and read those labels - it's your one and only body and our one and only earth. 
 
And, smile - everyone loves a smile.
