Claire's Corner Copia Earth Dinner,
2006. Select your choices from our organic ala carte menu and dine on a
splendid meal celebrating organic and sustainable foods, as you enjoy
hearing from our beloved farmers, Joe and Rebecca from the Common Ground
High School who grow our organic summer produce each year. We plan to
also host an organic dairy farmer from Organic Valley Cooperative.
Please join us. Reserve a table for this exciting event. A portion of
the proceed from the evening will benefit Common Ground High School.
Special thanks go to our friends at
the Organic Valley Cooperatives, who support their farmers in every way
possible, allowing them to produce the best organic dairy products
possible. And, to the Chef's Collaboritive, for their vision and
inspiration through their support and leadership to make for a more
sustainable world.

- Organic Salad of Spring Greens
and Spring Onions, with Jalapeno-Chive Ranch Dressing and our
housemade Queso Fresco
- Salad Bergamo, shaved spring
artichokes, house marinated mushrooms, roasted organic peppers, and
pistachios, over organic arugula with a lemon vinaigrette
- Organic Turkish Red Lentil Soup
with a Puree of Organic Carrots, Sweet Potatoes, and Connecticut
Apples
- Puree of Spring Pea Soup with
housemade Mint Creme Fraiche
- Fresh Made Organic Pasta
Fazzoletti, filled with fresh ricotta cheese, local mushroom and
truffle pesto, over a pool of fresh tomato and organic sweet corn
coulis.
- Organic Italian Penne Pasta,
with Savoy Cabbage, Organic Great Northern Beans, Spicy Soy Italian
Sausages, and local garlic, braised in organic Moroccan Extra Virgin
Olive Oil, fava bean puree, and organic vegetable broth.
